I found this a while back on pinterest, and as much as I’d just LOVE to take the credit for it I can’t but I also can’t keep it to myself… so for those days when you’re craving a cupcake or want to make for desert but don’t want to make a dozen of them here’s the answer.
CUPCAKES FOR TWO: 1 egg white, 2 tablespoons sugar, 2 tablespoons butter (melted), 1 teaspoon vanilla, 1/4 cup flour, 1/4 heaping teaspoon of baking powder, pinch of salt, 1 1/2 tablespoons milk. Preheat oven to 350 degrees. Line a muffin pan with 2 liners. Bake till a tester comes out clean (about 18 minutes).
