Made vegan waffles for breakfast/lunch and a few lovelies wanted the recipe so here it is.
Note: if you’re gluten or wheat intolerant play around with different flours you can have instead. Also, this is just a skeleton so play with it till you get it the way you like as most of my recipes I’ve made up with trial and error. With this one I sometimes add a fresh juiced apple (app 1/3 cup) to it instead of banana.
3 rice cups flour
2 Tbs baking powder
1-2 Tbs sugar (optional)
1/2 tsp. salt
3 cups rice milk
1 mashed/puréed banana
1/3 cup vegetable oil
1 tsp. vanilla extract
Mix it all together and then gooi it in your waffle machine. Decorate as pleased.
If you’re not a fan of “from scratch” baking then you can get the NoMu baking kiy and then simply switch out the egg and milk for an egg substitute and soy or rice milk :)
